Timid, distinguished, and still somewhat reserved, the first nose gives a glimpse of truly wonderful promises ahead.

After airing, the wine progressively delivers its secrets and origins. The second nose expresses fruit (black currant, blueberry, cherry, blackberry, raspberry), and reveals hints of flowers (iris , violet, peony), plants (cedar, mint), and spices (pepper, clove, cinnamon).

Body

A complex wine expressing the full Cabernet Franc fruit.

The attack is straightforward.

Stewed fruitiness brings thickness. Of pleasant acidity, aromas of eucalyptus and bergamot can be noted.
The overall aspect yields a supple, fine, and elegant wine with a long finish.

Vinification

Manual harvest in wooden crates, harvest sorting table before vatting. 100% destemmed

Fermentation in 60 hl truncated conical vats at a temperature of 15°C to 22°C, after 2 to 5 days maceration allowing native yeasts to start working.

Vatting for 15 to 20 days, followed by one year aging on fine lees in 12 hl oval and 60 hl wooden vats.

Lamb tagine with prunes and almonds.

Seven-hour lamb parmentier or venison with prunes.
